Cherry Tomato Omelet with Herbs

This very simple and quick breakfast dish can be made in less than 10 minutes. If you serve your omelet with whole-grain toast, you'll have a wholesome, healthy breakfast to start the day!

Serves 1

Ingredients:

2 large eggs
Sea salt
Black pepper, freshly ground
1 teaspoon of good quality oil or ghee
1/2 cup cherry tomatoes, halved
1/2 teaspoon of chopped herbs (thyme, oregano, basil, or any herbs you like)

Instructions:

In a small bowl, beat the eggs and season with salt and pepper.
Heat a small skillet on medium heat, add the oil or ghee and add the halved cherry tomatoes. Sprinkle them with salt and pepper and shake the skillet several times to allow the tomatoes to heat up but not overcook them. Put the skillet on the heat, add the beaten eggs and sprinkle with the chopped herbs. Cover the pan with a lid and cook for about a minute, until the top of the omelet is tender. Use a spatula to loosen the edges of the omelet and check if the bottom of the omelet is slightly golden. Slide on a plate and serve hot with toast.
